Today is my oldest sister’s birthday. She’s 20 years older than me and has always been like a second mom to me. She ran the St. George marathon with me a year and a half ago. She’s warm, bubbly, and one hot mama. Even 20 years after she left high school people would stop me and ask, “You must be Shelly’s sister?”
I still can’t believe she’s a grandma. Her four grandkids call her “Grandma Sugar”.
I know it’s WAY in the future for me but I’m a little sad that name is taken. Now my grandkids are going to have to call me “Grandma Butter” at the rate I’m going.

Banana Split Icebox Cake
Ingredients
- 1 carton (16 ounces frozen whipped topping, thawed (or use 3 batches of homemade whipped cream which is about 6 cups of whipped cream))
- 1 cup (8 ounces) sour cream
- 1 package (3.4 ounces) instant vanilla pudding mix)
- 1 can (8 ounces) crushed pineapple, drained
- 24 whole graham crackers
- 2 medium bananas, sliced thin
- Toppings: additional sliced bananas and sliced fresh strawberries
- Chocolate Drizzle:
- 1/4 cup heavy cream
- 1/4 cup semi-sweet chocolate chips
Instructions
- In a large bowl, mix the whipped topping, sour cream, and pudding mix until blended. Fold in pineapple. Fill a Ziploc bag with pudding mixture and cut off the corner of the bag.
- On a flat serving plate or large baking dish arrange four graham crackers in a rectangle. Pipe about 1 cup of the pudding mixture over the crackers; top with about 1/4 cup banana slices. Repeat layers five times. Cover and refrigerate for at least 8 hours or overnight. Graham crackers should be soft.
- Before serving, make the chocolate drizzle. For the Chocolate Drizzle: Heat the cream in the microwave until hot (about 20-30 seconds). Place chocolate chips in a small bowl and pour hot cream over the chips. Let it sit for a second and then stir until chocolate is smooth. Let cool slightly while preparing the bananas and strawberries for the topping.
- Arrange sliced fruit on top. Drizzle with chocolate and serve.

This looks delicious. One question- what size dish would I use to make this in, 8×8 , 9×13, would like to know to make sure I have the correct size pan.
It’s pictured in a 9×13 pan and there’s room on the side so that would be a good option.
I want to make this for a Memorial Day cookout but I am totally confused by the amount of sour cream. Are you saying 8 oz PLUS one cup of 1 cup FROM an 8 oz container? Maybe because I’m reading this at 5AM with no coffee intake yet? Lol. Thanks in advance for any assistanxe!

I’m planning on making this with my Granddaughter next week. I’m just wondering if you had to do anything special to the banana slices to keep them from going brown?
A little lemon juice helps them not brown.

I made this for my husbands birthday and it was a hit. I didn’t pipe the cream mixture but spread it on each graham cracker one by one. Instead of strawberries I used mashed raspberries w/ the banana slices. I found that the graham crackers were soft enough within 4 to 5 hours of serving. I used a different recipe for the chocolate drizzle. This dessert was light and I would definitely make it again . Would be good to make for 4th of July and incorporate blueberries too .

I am making the banana split ice box cake using real whipping cream. Do I whip the cream first then add the pudding mix? Do you add the pudding mix dry? I need clarification.

Yes, whip the cream first. You will need 3 cups of unwhipped cream. Once it’s whipped it will equal 6 cups. Then fold in the dry pudding mix. Good luck!

You could leave it out. It’s just part of a typical banana split.

This looks so yummy, I have to try this…I do have a question, forgive me if it is a silly one, lol, but the pudding mix, do i make the pudding first and then blend it, or do i just blend the box of pudding mix? Thanks so much.

You do not have to prepare the pudding. Just add the dry pudding mix and blend.

While I appreciate your comment, if you know anything about the blog world and etiquette, if you’ve changed anything from the recipe you are supposed to say “adapted”. Recipes are not copyrighted, only pictures. I used fresh whipped cream here and changed the chocolate drizzle to be thicker and thought that should be noted.
Adapted from Taste of Home? This is copied almost verbatim from Taste of Home. The only difference is that you specified the toppings. Why not simply state that you copied it?

You need to make sure that you completely incorporate the cream and the chips. It will take some time and using a whisk will help. You can also use baking chocolate but I always have chocolate chips on hand so I use those.
My chocolate drizzle didn’t come out as nice as yours :/ I guess the chocolate chips didn’t melt as well and they left little specks of chocolate in the drizzle…is this because of the kind of chocolate chips I used? I used Nestle Tollhouse.

I used an 11X14. You would need a super unique pan the size of a graham cracker for it to take up the whole pan or you could assemble it on a platter.
What size is the serving plate you used? I am wondering if there is any way to arrange this so that it would take up all the space in a serving plate? Like, a 13×9 inch for example?
